An Ode to my Slow Cooker

Hello Ladies !

I know many of you like me are super busy. Sometimes we don't know what to make for dinner. But more often we don't have time so we order out. This costs a lot of money. According to The Simple Dollar :The average American spends $232 per month eating meals prepared outside the home. Given that there's 18.2 meals eaten outside the home in an average month by the average American, the average meal outside the home costs a person $12.75.

My mother in law gave me a vintage Rival slow cooker with a ceramic pot. I was hesitant to use it. The first time I used it I decided to make honey mustard chicken. I mixed the honey and mustard with spices and covered the chicken breasts with it. I cooked this on high heat for 4 hours. Once it was done, I made rice and served it. I was pleasantly surprised by how moist and flavorful the chicken was.  My husband loved it. I recommend a slow cooker to all moms and even the single ladies. You can add all ingredients to the pot and cook on low for eight hours. Start in the morning and by the time you are home dinner is made. Below is a recipe I would like to try for ribs.

  • 4 pounds bone-in beef short ribs, cut into pieces
  • Salt and pepper, to taste
  • 1 white onion, finely chopped
  • 4 garlic cloves, minced
  • 2 cups of Coca-Cola
  • 3 scallions, chopped

  1. Place the short ribs in the slow cooker. Season with salt and pepper. Add the onions and garlic over the ribs.
  2. our in the Coca-Cola, cover and cook until the meat is separating from the bones, 5 to 6 hours on high or 7 to 8 hours on low, or according to the slow cooker manufacturer’s recommendation.
  3. Using a slotted spoon, transfer the ribs to a plate and cover with aluminum foil. Skim the excess fat off the sauce. Season with salt and pepper and add the scallions. Cook for about 15 minutes more.
  4. Spoon the sauce over the ribs and rice, serve immediately
I will post how it comes out ! Remember that saved money can be used for better things like shoes and makeup!
